Today has been a very busy day for Tiff and I. Today’s blog will be on the short side because I’m not even getting to it until 7:30 in the evening. We had both a good and bad day. We went to a Farmer’s market and got a great find on good organic juicing carrots, ate a completely vegan mid-morning breakfast that was delicious and got in lots of fresh air, sunshine and activity today. On the bad side we only got about 50% of our food raw instead of the 75% that we planned on. We’re not managing our time as efficiently as needed in order to do all that we need to do. At work I do a great job of managing my time, but this is different and I’m not doing very well. We spend a lot of time shopping for food and then having to prep the veggies and fruit for juicing. Then there is prep time for our meals since we do everything from scratch. If anyone has suggestions I would love to hear them. Now that I think about it, when I was a stay at home mom with young children I wasn’t very organized then either. I did manage to keep everybody fed, dressed, clean and overall healthy so I guess that I didn’t do too badly.
Last evening we did check our stats. We all lost weight and lowered our BMI’s. We won’t give amounts lost for another week or 2. Tiff and I are also monitoring our blood pressures and we are both very pleased to have readings well within normal limits. Our heart rates are also very good. We continue to see a spike in our energy levels and are more productive in our day to day lives that either of us have been in years.
Sorry to end so short today. We’re tired so…day 8 is done, day 9 is on the way. A quote from Gone With the Wind “don’t squander time it’s the stuff life is made of.”

Interestingly I see mom (joyce) in this pic…..I believe the only other thing Tiff needs is for me to twirl a broom for her. This week I planted some rhubarb and tomatoes in hopes of some nice fresh bounty for the future.
I’ll share the broom twirling with her – I had forgotten about that. I thought about planting some veggies here but then Hannah would have to assume to care of them and I’m not wanting to put anymore on her plate right now. There is wonderful fresh produce all over here – I guess due to the wonderful weather. We are eating truly delicious fruits and veggies. I may have a hard time going back to Iowa 🙂
After watching my dear friend eat WFPB for a few years & knowing how she turned around her own diabetes, I’ve lived a mostly WFPB lifestyle for almost 5 1/2 years now. It’s quite the commitment, making all the meals. I must tell you, it’s work! So worth it, but work nonetheless!
Rather than juicing, I make a green smoothie concoction for my 34+ year-long non-compliant diabetic husband and myself every weekday morning; I get up early just to make them; they alone have helped reduce his A1C to it’s lowest level in MANY years (from 12 to 8)…if I could just get him to lay off the junk & exercise some, I’m sure that 8 would be even lower. He is my motivation, just as sweet Tiffany is yours. I’m immensely grateful you know the benefits of this lifestyle and are also committed to doing what it takes.
I’m most successful when I prep on the weekends; when don’t, I fall in the junk food trap and sabotage my momentum. Winters are easy because I can make a few pots of soup & have them through the week; summers are good because I can make huge vegan salads (we know the difference in a vegan salad & those made by non vegans 😉). I just finished Dr. Neal Barnard’s new book The Power Foods Diet & have started adding a lot of his suggestions to my daily routine. I need to stop being a junk food vegan!
Please don’t stop doing all you’re doing. Not only are you helping yourself & your daughters, you’re motivating me too, and I thank you for that. God bless you all!
Tiff and I really enjoyed reading your post Beki. Just a day or 2 ago we talked about implementing smoothies soon. You can get a whole day of fruit and veggies in one smoothie. We have not been the best at prepping ahead of time, we are doing most of it the day of use – this will have to change before we go home and HAVE to prep in advance in order to be successful ongoing. I really like “junk food vegan” – its amazing how much vegan food you can buy that really has no health benefits. We have to be very careful not to get into junk food – we aren’t snacking at all just to avoid that trap. Thank you for reading the blog and chiming in.
