Today we went to a different Farmer’s Market and then on to PaPaGo Park.  There are large rocks there and several ponds with palm trees.  Lots of places to walk and see the scenery.  We had beautiful weather today for this venture.  We did lots of walking in the sunshine and fresh air.  We are becoming bolder in our walks – we are venturing to areas that are not as level as we usually walk.  We do this to challenge ourselves to use more muscle and to get a better walk.  We’re not sure how much distance we walked today but feel that it was around a mile.  We continue to take evening walks also – these walks are .4 miles, and we push ourselves a bit more in the evenings – to walk at a faster pace.

Today Tiff made an excellent potato salad that had corn, black beans and different types of veggies and spices.  It had a bit of a bite to it for me, but I acclimated well and enjoyed it.  Tiff likes to cook, she hates the clean-up.  As we get closer to our time of returning home, she talks about the different meals that she plans to prepare for her family.  She has no delusions that her family plans to go vegan, but she plans to show them that eating healthy with no animal products can be very delicious, as well as having more nutrition.
