When I came out of my room this morning, I witnessed a miracle! Tiff was up, dressed and in the kitchen preparing to make today’s freshly extracted juice. Many of you will not understand why this is a miracle so I will try to explain. Tiff and I both are extremely lazy – as a rule. I am going to risk hurting her feelings by saying that she is even lazier than I am. The 5 days that we have been here she has done as little as possible and often rolled her eyes at me when I have asked her to do something. It was as if we were mom and teenager again. I have not pushed too hard to this point because I had decided not to push her during this 1st week of so much change. So this burst of early morning energy has to be attributed to the diet changes. I want to add that she was not only energetic but also in a really good mood. Now I don’t know for sure but I think that Bruce and Trenton would view that as a miracle all by itself!
We went for our 1st 10-minute walk and it went okay. Tiff tolerated it fairly well. She got a little bit winded and had a mild episode of lightheadedness. I, however, had terrible pain in my hips – arthritis! The last few minutes of walking for me was more waddling than walking. We made it back to the house in one piece and have decided to do a 2nd walk this evening if the heat cools down enough. Getting out and walking also gives us time in the fresh air and sunshine – we kill 2 birds with 1 stone when we walk.
I made a loaf of banana bread night before last. I mixed ½ & ½ unbleached flour with whole wheat flour to use. I used egg replacer instead of an egg. I used 2/3 cup of honey in place of 1 cup of regular sugar. I used plant based “butter”. It turned out wonderful! Very moist and flavorful. These types of treats will be rare because there is not much nutrition in the bread and our goal is to get as much nutrition as possible in our bodies daily for healing. The bread is vegan and mostly organic. This brings up a point to talk about. We need to be very mindful that we don’t just replace our old ways of eating with similar unhealthy habits that happen to be vegan. For example, I can eat an impossible burger with dairy free cheese, all the fixings and French fries. This would be a vegan meal. There is not only very little nutrition here but it is also not aiding in the need to change my eating habits and tastes. Burgers and fries are what helped us to get into this situation. So, we need to be changing our eating habits. An occasional vegan burger and fries meal is okay, but it’s this type of daily eating that led to all of our health issues. We don’t need to be feeding into our food addictions, we need to be changing them.
Day 6 is done, 7 is on the way. In the words of SpongeBob SquarePants “Look at all the hip, young people eating sa-lads!”

Just catching up with you all today-and reading through this wonderful and also serious journey. I am inspired and made a very similar banana bread- Mind body spirit – again- so inspired.
Thanks Roy. We’re not going to make any more banana bread any time soon as it was sweet and we’re trying to avoid that for right now. May in a week or 2. Enjoy yours!!
